After the highly prized top two leaves and buds have been harvested for Special Silver Needle, the remaining leaves and silver buds are picked for Pai Mu Tan.

These virtually weightless leaves produce a tea that is both elegant, aromatic and health promoting. Don't try to measure this tea with a teaspoon, you will need two tablespoons per cup.

Brewing guide:  Two tablespoons per cup and steep for 3 to 4 minutes in 75° water.

    A lovely light-tasting tea. Difficult to gauge how much to use as the leaves are so light, long and springy, making measurement imprecise as you can't get the same amount onto to same spoon or scoop consistently. Minor problem.

    This tea is incredible! Very distinct flavour from other white and green teas I've tried and by far the best in my opinion! I would suggest brewing it at a relatively low temperature though (especially if you re-brew) I usually start at 1 part cold water to 3 parts boiling and gradually get hotter the more re-brews I do (typically 2 - 3)
